What I Eat in a Day | Vegan Mom | Chickpeas 3 Ways

Chickpea Scramble:

1 can drained Chickpeas

1/2 cup tomatoes

1 cup fresh spinach

1/4 onion

1/4 cup vegan pesto

1 TBLS turmeric

1 TBLS crushed red pepper

1 tsp black pepper

1 tsp salt

1 TBLS green onions

2 slices sourdough bread

 

Tuna-Less Salad Wraps:

1 can drained Chickpeas

1/2 Avocado

1/4 cup cucumber

1/4 cup green onions

1/2 cup red onions

1/2 cup vegan mayo

1/8 cup seaweed

1 tsp black pepper

1 tsp salt

Lettuce for wraps

 

Coconut Braised Chickpea Stew:

1 can drained Chickpeas

1/2 cup onions

1/4 cup sun-dried tomatoes

1/4 cup coconut oil

5 cloves garlic

2 TBLS minced ginger

2 cups fresh spinach

1 can coconut oil

1 tsp black pepper

1 tsp salt

Juice of half a lemon

Top fresh cilantro & crushed red peppers
